Growing coffee above 1,200 meters is tough work. The thin air, rock-enriched soil, and cool nights cause the cherries to ripen more slowly, so they develop a higher level of flavor. Himalayan beans are notably complex in the taste department, with bright florals, fruit notes, and a sweet finish.
